White Chocolate Crispy Treats

crispy treatsI was first introduced to these white chocolate crispy treats when my wonderful sister-in-law, Alina, made them for my baby shower. For some reason, biting into this white chocolate mess was one of the highlights of the evening. 

I also remember them being a huge hit with all the guests.

So I knew I had to share them with you. I actually doubled the recipe (thats about 104 treats) and took them to our church potluck. And they all dissapeared. 

These are perfect for the coming holidays. No baking required, they can be made days ahead of time, and I will guarantee you, you will get a lot of, Mmmmms. :) Thank you Alina for sharing these amazing treats!

  • 6 cups (150g) crispy rice cereal
  • 1-1.5 lb. white chocolate (I used two 11oz. pkgs)
  • 3 Tbsp oil
  • 8 oz. silvered almonds (1 1/2 cup)
  • 8 oz. unsalted sunflower seeds (1 1/2 cup) (optional: 4 oz salted, 4 oz unsalted)

crispy treatsPreheat oven to 350°F and line two baking sheets with aluminum foil. 

Place the almonds, and sunflower seeds on the prepared pans and lightly toast in the preheated oven for no more then 5 minutes.

The original recipe calls for unsalted sunflower seeds, but because I only had a few unsalted seeds, I combined it with salted and really liked how they turned out. I urge you to try it.

crispy treatsGrease cake pop pan with cooking spray and line mini cupcake pan with cupcake liners. Or line a baking sheet(s) with parchment paper.

crispy treatsAdd the cereal to a very large mixing bowlcrispy treatsAdd the toasted nuts and mix until combined.In a double boiler or large bowl over a saucepan with water, add one bag of chocolate chips. Bring over medium-high heat stirring constantly. When the water starts to simmer, turn the heat down to low and continue mixing until melted, add in the rest of the chocolate and mix until melted. Add 3 tbsp of oil to liquify it, and mix until combined.

crispy treatsSome notes on the chocolate:

  • If you are not using special melting chocolate, do not melt in the microwave, the chocolate will clump up into a solid mass.
  • If your chocolate does happen to clump up, add a few tablespoons of oil little at a time while slowly mixing in a double boiler over very low heat. Your chocolate will still be slightly lumpy but it will still work.

crispy treatsWorking quickly, add the melted chocolate into the cereal/nut mixture and mix well until combined.crispy treatsFill the cupcake liners or cake pop pans with the crispy treats, and lightly pat them in.

If using a regular pan, use an ice-cream scoop or a cookie scoop to scoop out cereal and form onto baking sheet.

Place in freezer for about 5 minutes until stiff, pop them out, and repeat until cereal is used up.

I urge you to try it If you are not using special melting chocolate, do not melt in the microwave, the chocolate will clump up into a solid mass. Your chocolate will still be slightly lumpy but it will still work. Work quickly so the chocolate won't have time to stiffen. If doubling the recipe, I recommend doing it in two batches.
