Muzhskoy Ideal (Men’s Ideal Cake)

muzhskoy ideal cakeI’m not sure if this is the ideal men’s cake or not, but I sure know it’s mine. Cream that oozes out of a cake like that is a winner for me. And as far as the taste goes, something like cookies stacked together with caramel buttery cream in between. myzhsoy edial cake

The process of making it reminds me of the medovik cake, where you have to spread the dough with your hands onto the pan. 

Is it time consuming? Yes. But is it worth it? Definitely.

Yup it has brandy in it. (Oops minus the butter.)

Oh, and plus the walnuts.

Amazing combination, which makes an amazing cake. It’s a big cake, serving 30 people, but you can easily half the ingredients for the dough and use 1 can of dulce de leche instead of the condensed milk in the cream.

Here’s how to make it:

Prepare a 10×15 inch baking pan with parchment paper.

myzhskou edialBeat the eggs with the sugar for about 10-12 min. Add the honey, brandy, walnuts to the batter. Add the vinegar to the baking soda, let it fizz, and add to the batter. Mix everything until combined. 

myzhskoy edial cakeAdd the flour and mix until combined. It will resemble a very sticky mass of dough.

myzhskoy edial cakeOk, here’s the hard part. Divide dough into 4 equal parts. I totally eyeballed this, but if you have scales, use those. You can also form the dough into a log and divide. Best way to form it is to have several chunks of dough scattered throughout the pan. Then dip your hands in flour, shake off excess and spread dough using your fingers. The dough is very sticky, so you will be flouring your hands often.

myzhskoy edial cakeBake in a preheated oven of 350°F for 9 -10 minutes. Repeat with the other 3 layers.

myzhskoy edial cakeAdd condensed milk, and dulce de leche.

myzhskoy edial cakeMix for about a minute. Add the walnuts and mix until combined.

myzhskoy edial cakeTo form the cake,  spread 1/4 of the cream onto the first layer. Put the second layer on top of the cream, and repeat with the remaining layers and cream, ending in cream on top.

myzhskoy edial cakeTo make a nice presentation, cut off the sides of the cake. And cream the sides.

myzhskoy edial cakeDecorate however you like. I used ground walnuts for the sides and dusted cocoa powder on top. Refrigerate overnight before serving so the cream can get soaked into the cake.

Ingredients

  • 4 Tbsp honey
  • 4 Tbsp brandy

  • 2 tsp baking soda
  • 3 3/4 cup flour, plus more for dusting hands
  • Frosting:
  • 1 can condensed milk
  • 1 can dulce de leche
  • 3 sticks butter
  • 1/2 cup ground walnuts

Instructions

  10. Add condensed milk and dulce de leche.
  11. Mix for about a minute. Add the walnuts and mix until combined.
  12. To form the cake:

Notes

Keep in mind you will need to refrigerate the cake overnight before serving.

      Yes, I think the cake gets its name from a combination of men approving ingredients, dulce de leche, nuts, and the brandy. ;)

      Hi! Yes you can definitely omit the brandy, I’m not sure if it would taste differently because I’ve never done it without the brandy, but I’m sure it wont make a drastic difference. Since you will be using less liquid, I’d also recommend using 3 1/2 cups of flour instead of the 3 3/4 so it won’t come out too dry. Glad you found me :) hope you enjoy it.

      So sorry! I always seem to be forgetting an ingredient. Use 1/2 cup in the cream and 3 cups in the batter. Thanks for catching it.

    In Costa Rica they make a cake called torta chilena which is fairly similar to this cake. It’s my husband’s favorite. Thanks for sharing the recipe, I like to play around with recipes for this cake and torta chlena to come up with perfection!

    Hi. I have a quick question. Is the cake suppose to be moist. I had mine in the fridge overnight and its not moist. And thank you for the recipe.
